This type of vat is a batch pasteurizer and it is widely used for the production of yoghurt. These vats are made of stainless steel and are insulated with a water jacket. Two alternative patterns are used for the production of yoghurt. In the process vat is used for all types of productions required for preparing yoghurt. Whereas in the second approach vat is merely used in the preparation of milk which involves mixing the dry ingredients with milk and then heat treatment is provided for cooling to incubate the temperature.
